I bought the ink cartridge and the printer would not recognize it. HP support sent another one. That one also is not being recognized by the printer. It is the correct number and all other colors worked fine. The printer will not work even in black and white without this cartridge.
No, I would not recommend this to a friend.

I am sorry that the cartridges you were sent did not work. That sounds like it was disappointing!
Your problem is a bit tricky. The cartridges could be defective, or it could be a compatibility problem.
One thing that you need to check is that the cartridges include 'z10' after the cartridge number (HP 951). If not, you were mistakenly sent cartridges that were customized for a region other than North America.
If they are, it would mean that due to previous purchases, your printer has been set to accept a different region's cartridges. We can fix it though so that you can use North America-region (z10) cartridges.

I ordered the cartridge for 2 day delivery, but did not receive it until a week later. The cartridge works fine, but the printer does not work when a single color cartridge is empty rendering the entire printer useless for the entire week.

My apologies for this happening to you. I can understand if you are frustrated with the wait. Unfortunately, the current crisis is delaying most shipments.
There are advantages and disadvantages to different types of printers. Many people prefer the ones like yours, with separate ink cartridges, because you only have to replace each single color as it runs out. To get more information about why you can't print when a cartridge is depleted, you can reference this online document: support.hp.com/us-en/document/c04331666
You should have gotten low ink warnings to help you get a replacement cartridge in a timely fashion.
When you only want to print in black and white, you can change the settings to print black only. Now, you will still (very rarely) have to get color cartridges because the tiny nozzles that spray the ink onto the paper will clog unless they are cleared regularly. When you are not using a color, the printer will have to use a tiny bit of ink during maintenance to clear the nozzles for that color.
