Do these headphones also totally cancel all outside noise for the times I need total quiet to concentrate at work?
Not really, I use them on a flight and can hear outside conversations and announcement BUT VERY muffeled. The noise of engine is cut out significantly, though.

If the headphones die. Can they still work when you plug it into your phone?
If you mean if battery is out then you can switch to wire only.
