Can the tones be shut off or silenced?

Yes, before the cycle starts you have the option of changing the volume of the tones by pressing the signal button until you get to the desired volume or turn them off completely.

How can I control the water level ( to use MORE Water) in my cycles ????

I've only used my washer a few times, but I've come to find out that if you use the Turbo Wash feature the jets on the side of the washer continuously sprays detergent and water onto the clothes and they toss in the tub. Your clothes will come out a lot wetter at the end of the cycle.
