I have a wired network and want to have wireless cover the entire building. Can I plug these into the ethernet throughout for better coverage? Can you turn off features like DHCP and Firewall and let them act as dumb wifi extenders?
That would be a waste but you can modify the DHCP. They all have 2 Ethernet ports so you can hardware whatever you want. The speeds will be the same though. When speed testing my wired computer and phones, laptops, and tablets, I get the same results. Full paid for speed.

I have ATT Fiber with no service on the 3rd floor or outside porch. Will this system eliminate spotty service in those areas and will it work with the ATT Fiber Gateway?
Yes. This will ensure you get reliable service throughout your home. The bubbles are huge. I'm covering 3 floors (one is a basement, I'm covering 4,000 sq ft). I get reliable signals and speed in the garage and around the house. No dropped signals, full speed on each device in use.
