Can the subwoofer be controled not to be so strong if desired?
yes it has a menu to control the settings of the subwoofer.

Can you plug a mixer into the sound bar, and use it as a PA system?
This will be used downstairs in a church, can you switch between the optical input, and the RCA inputs?
yes you can switch between the optical input and rca inputs.

Does the system work without the two rear speakers plugged into the wireless sub?
I was considering buying this system but was thinking about my current home theater set up and didn't know if I have the space to utilize the two rear surround speakers. I was wondering if the system functioned as a 3.1 if you didn't use the two rear surrounds? I like this system over the 2.1 but might not use the rears at first. Can anyone help me with this question.
yes it does. the 2 side speakers plug i the sub if you don't plug them everything still works.
