I assume the flipping insures the batter spreads evenly in both top and bottom sides. Follow the instructions and it will brown evenly. Oil the plates, close, preheat, open, put in the batter, close, let it sit for 10 seconds or so, flip, wait until the green light goes on, flip again, open and find a nicely done waffle. Of course, adjust the setting to your degree of doneness after a few tries.
