Does your Insignia have an optical audio in? Yes. The TV also has RCA stereo out if that helps.

sound from "optical out" ?

If I have 4 HDMI cables into the tv and only use the one OPTICAL cable to my older surround system (pre-HDMI), will the sound delivered be multi-channel for each of the different sources? Or will it be compressed to 2 channels?
My current TV requires that my sound be delivered to my stereo directly from the source (DVD, WII, Cable) otherwise it is only 2 channel. (HDMI cable from source to TV. Optical, Coax or component to my stereo)

That's totally dependent on your surround sound, not the TV.

What are the out side dimensions of the both the 55 and 60 inch Vizio Seres E TV's including frame?

The 55 is 48 1/2" wide and 28 1/8" tall. I just measured for ya.
