No issues at this point. It is an upgrade from a home theater system that did not have but a single input and no outputs. The multiple outputs make switching to separate devices easy.

Would I be able to hook up only 5 speakers?

I am interested in this receiver and realize the system is for a 7 speaker setup. However, with my setup I only need 5. would there be a problem if I only ran 5 speakers?

Absolutely. I have five satellite and a subwoofer. I don't have to turn on the sub and the system works fine. Of course without the sub the sound is a little tinny due to no good bass in my satellite speakers.
