How do I take the tv off of the wall mount and off of the wall?

There are two spring loaded clips on the part of the mount that's mounted to the TV Just unclip from the part of the mount that's mounted to the wall.

Once the bracket is mounted, can the TV be adjusted vertically? And if so how.

No.You have to mount the bracket where you want it.
