Can I easily add a channel (free) and then delete the channel if I find that I don't use it?
Yes, and it's not hard to add and delete, prompts are pretty clear.

how far away from tv can the router be?
My router is in my bedroom and I've used the Roku stick on both the bedroom TV and the living room TV, which is about 40 ft away, with no noticeable difference.
