Someone came out to fix it and ordered a new part. It took 1 month to get the new part installed and the refrigerator side still freezes.

Would we need to hire a plumber or other person to hook up the water for the ice maker or is it a simple process?
It's a simple hose hook up in the back. If you have the required stainless steel hose it will be connected for you. You should purchase this with the refrigerator if you don't already have one.
