Can the volume be controlled from the blue tooth device?

Yes it is paired and will allow volume from the device.

Will I need 2 units for a rich stereo sound?

You won't be able to run it stereo as it pairs with only one device.

Can I answer / use this in place of my phone ear bluetooth?

I need a bluetooth that I can use on my desk to answer/talk/call instead of having to have one in my ear all day... does this do that or does any product do this?

No it won't transmit like a speakerphone.
I personally didn't want it to. So I am pleased
