what can I do to listem my Iphone into a regular stereo

If your stereo has RCA inputs then this cable will work, if not then you you can get a 3.5 cable on both ends and use it with the microphone jack.

Can I use only one leg of the output cable either red or white?

Yes you can, you will only get left or right channel.
