Is there some kind of update u can do to the stereo when it’s playing the fm the screen constantly changes shows all kinds of stuff

Sounds like the DEMO is on. If you don't want to see all the different screens turn off the demo.

Does the radio turn off by itself when the car is turned off?

Yes once the car is powered off the head unit will power down.
