Can you juice ginger and turmeric with this juicer?
You can, but you'll want to peel and cut it into small pieces. You'll also want to juice it with something else, like lemon, kale, etc. The stringy fibers will also require you to deeply clean the filter basket, and may require you to replace the filter basket more often than every 9-12 months, which is the normal lifespan of the filter basket.

How do you make toast on both sides. When I toast it only comes on one side. I put it on toast the # of pieces of bread & how long….still it toasts on one side
Inherent in the design of a toaster oven appliance, in comparison to a traditional upright toaster, is that the toast is in effect laying on a wire rack, and free of obstruction on the top. The wire rack naturally deflects a significant amount of radiant heat, and therefore toasting less than the top of the bread, which is exposed to the heating elements without the rack in the way.

Will I have to peel and quarter apples and oranges
You will want to peel citrus. Whether you'll have to make the pieces smaller will depend upon the size of the produce.
