how do you bake and roast,barbecue in thisoven? also; Ihave turkey breast that call for 3 hours cooking and the timer wnt only to 2hours.

It is generally recommended, in the instruction book, that roasts be done in the Breville® BMO870 Combi Wave™ Microwave using the Fast Combi option. Bake can be done on the oven setting as a normal convection oven. And by using the Grill function and the accompanying grill place, BBQ can be done as well.

what is the baking temperature increment? every 5 degrees?

The Breville® BOV900 Smart Oven® Air does increase in temperature at a minimum of 5 degrees. It is incredibly rare that any recipe will require an off number such as 242 degrees of 387 degrees.
