Does this oven come with a griddle option for the fifth burner? I saw this range with an optional cast iron griddle in another store.

In looking at the picture here online, the griddle is not on the range top. I was wondering if this extra piece for the middle burner has to be bought or if it comes with the range. I am hoping that it does come with it because that was one of the selling features when I saw the range in the store. Thank you!

Can the oven temperature on this unit be adjusted up or down while the oven is on?

Or would you have to turn it off then input the new temperature. Also, can the oven temperature be adjusted while convection mode is on? or are you stuck with the default 350 degrees.

It can be adjusted while the oven is going. You don't have to turn the oven off. You only have to cancel the oven temp and input a new temp through the digital display and press start. Super easy.

What is Sabbath mode

Looked through the included manual and found it on page 27. Here's what it says:
"To set the Sabbath Feature (for use on the Jewish Sabbath & Holidays). The Sabbath feature may only be used with the Bake feature. (Oven) display will not be visible and no audible tones will be provided... The Sabbath mode will override the factory preset 6-Hour Energy Saving feature."
Basically, 'Sabboth' mode is the ability to schedule cooking time.

"Power cord and gas connector are sold separately and are not included".
what type of power cord is required for this gas range?

It comes with a power cord. Just plug it into a normal outlet. Don't know why they said that.

Does this model have the "quick boil" feature?

Yes, actually two. 2 burners are quick-boil. They put out so many BTU's that boiling time is cut in half. I would strongly recommend that you have a good range above the stove, and that you back the wall in back of the stove with cement board. Otherwise yours walls will get too hot. I bought cement board from Home Depot and put it under, in back of and on both sides of the stove. I covered (glued) the back part of the wall with precut sheet steel from Amazon, right over the cement board. It was all easy to do and prevents any chance of the house catching fire, and it looks great. This stove puts out a LOT of heat!

is the center burner oval shaped

Yes. Sits in the middle of the stove and is a long oval, to ensure even heating of the included cast iron griddle.
