Hello Susan, I do use the long navy blue knife as a Fillet Knife to cut chicken cutlets nice and thin which does the job easily. Also, if you want to cut chicken nice and thin for chicken cutlets, always have your chicken breast semi-frozen, as this makes cutting the chicken super easy, and you can cut the cutlets as thin as you desire.
