My Windows 7 laptop crashed. Will this transfer ALL the data and programs (including favorites,etc) from the old (removable) hard drive to my new Windows 10 laptop easily and without other software or eqmt being purchased or messing up W10?
Yes it will, but the programs you transfer will not work. They need to be installed on your new machine. Your files will be fine and work.

What is the largest external HDD supported?
I think 2 or 3 TB (2 TB for sure). I am using it with a 1 TB harddrive.

Will this device transfer the old music & photos from a PS3 HDD that was removed when a PS3 system failed due to an unrelated problem? The pix stored on it are dear and unreplaceable & the music is quite old & hard to find as well.
It should, but I am not certain. You will have to try it.

No. Only SATA. Sorry
