Yes but the files are large, Its best to do 4K video editing on a computer.

I was able to pair them with the new Apple TV via bluetooth. If your TV supports bluetooth I would think it would work but I suggest you check your owners manual first.

I just purchased the Sony 1000x headphones and need to purchase a new smartphone. Which smartphones work "best" with these headphones?

They would work fine with any smartphone. I wouldn't make my decision based around these headphones.
