The purpose of the Steam Quick steam cleaning feature on the FE-R300SX is to help clean spilled and splattered grease and food from the oven cavity before it gets burned or baked onto the oven surfaces over time. So, for example, if you bake a pie and it spills a bit onto the oven floor, using Steam Quick that night, or before it has a chance to set and get baked on again, may enable you to clean up the mess without having to use the high heat necessary for the traditional Self-Cleaning method. If, on the other hand, there is a spill that gets baked on again and again, it is likely you would have to use the Self-Clean feature to clean the oven.

I'm sorry to hear you're having an issue with your range. It is common within the industry for there to be a variance of up to ±25°F between the set temperature and the actual oven temperature, based on a number of factors, though Samsung ranges are actually designed to have even less of a variance (±10°F to 20°F). If you find that your range is cooking faster or slower than familiar recipes call for, you can adjust the internal thermostat by up to ±35°F by following the instructions on page 28 of the user manual. The Control Lockout (or Child Lock) on the FE-R300SX allows you to lock the buttons on the touch pad so they cannot be activated accidentally, such as when you're wiping the control panel to clean it. This model's Energy Saver (or Auto Shut Off) feature automatically turns off the oven after 12 hours during baking functions or after 3 hours during a broil function, in the event the oven is left on accidentally. Both of these features can be disabled or enabled by following the instructions in the user manual.
