that is NOT true. CarPlay launches on iPhofne 5 and higher. It was recently tested with iPhone X Max to work

Why are some incoming calls really loud and others to low volumes?

That weird that you are have a difference in BT quality. When its low, I would ask the person that you are talking to if they are on speaker phone. Speakerphone call to speakerphone call can sound low or distorted
