I cannot get the stove to heat past 200 degrees. Does this require calibration? How can this be solved?

I just had this fridge installed today, is it normal for their to be an almost petroleum jelly substance where the doors come together. In that little hinge thing when you open and close left side?? This is one photo but the hinge is in the middle.

What are the size specs: width is 30" but what about height & depth?
