why does the 860 go into the preheat mode again when i remove the pan to turn food over?

How quickly can this do light toast and is it evenly toasted on both sides? My old Panasonic toaster does light toast in 2.5min so hoping it's around this time.

The toasting time will depend on the bread used. Bread with higher sugar contents will toast quickest. Of course, because of the cavity size, a toaster oven will toast slower than a regular toaster.

The filter basket compartment opening mechanism does not open all of the way - i have to pull it open. Anyone else’s stick?

The filter basket door is made so that it doesn't flop open. That way it doesn't potentially spray water/coffee out.
