Hey, Jon. Yes, you should be able to upgrade the SSD to 1TB, but just so you know, this model features one M.2 2280 SSD slot so you would have to swap out the 1TB drive for the existing 512GB SSD.

Can I easily use this on my lap?

Hey, thank you for your question. For transparency, you may experience issues with using this system on your lap since the keyboard and stand when attached were designed to be used on a stable, flat surface. Due to this, you may be dissatisfied with the instability when typing or using your Duet 11 in general when on your lap. The softer the surface, the more uneven the tablet and keyboard will become when in use. Hope this helps!
