Would this work/fit a ‘05-‘09 mustang?

From what I can find online, you can handle a double din in your Ford Mustang. You might a dash kit though. BestBuy can help you with that

How do you get it set to color changing illumination?

This setting is found in MENU under COLOR. Options are PRESET, DAY COLOR, NIGHT COLOR and COLOR GUIDE

This only goes 35 for the volume? How do I make it louder if it only lets me listen to it on 35

It should like you have maximized the internal amp. If you sound you are after, its time to consider an aftermarket amplifier

How can I tell if double din will fit a Honda 2007 civic it’s not on your list thanks

From what I can find online, your car should be able to fit a double din. You might a need a new dash kit though. Reach out BestBuy for pricing on dash kit

Can I talk on the phone through this unit?

Sure can! You can also stream your music in your phone as well.

I am sorry you are having problems.
Please make sure all the connections are secure, that the charging plug is secure into both the headphone, and the wall charger. Please let it charge over night. If you have any issues after that, it may be defective some how, and need to be returned to the store.
