There is not an external mic port on the HERO11 Black itself, but the HERO11 Black can be used together with the GoPro Media Mod or the Pro 3.5mm Mic Adapter. Both of these accessories include a 3.5mm external mic port.

The duration of a time lapse depends on the interval you use for the time lapse (ex. one shot every 5 seconds vs. every 5 minutes), the size of your memory card, and the power supply you're using with the camera. In general though, you can record very long time lapses if you choose to. Some users are able to record time lapses that last weeks or longer. Does this camera have GPS so that if it gets lost/stolen I can find it?

The HERO11 Black does have GPS, but that function is designed to help you track data to overlay or use with your videos (ex. show the route you rode your bike on, the speed, etc.). The GPS function is not able to be used as a finder tool though. If that's a concern, you may want to use a third-party transponder along with the camera.

Is it possible to record without sound and do a voiceover later?

There is not a setting to record only video, but many video editing apps will allow you to separate and edit the audio from the video to add in voiceovers in later.
