When writing with the pen in the tablet mode, I assume the keyboard would be facing out and on my lap. So I wonder if there's a problem with accidentally hitting keys or the touch pad with my knee/leg and causing some inadvertent action?

No, once the screen is rotated past 183-degrees and then into the tablet mode, the keyboard automatically turns off. It will turn back on when your screen is rotated back.

How can I connect the laptop through HDMI cable and LAN cable?

No, you will need adapter to connect this device to an HDMI device and to ethernet. This system has a Thunderbolt 3.1 port that carries HD audio and video and with an adapter, you can connect to an HDMI port. Additionally, you can use a USB to ethernet adapter to connect to ethernet.
