Will it work for a Yoga 900?

The dimensions of the sleeve are (inches): Height - 14.75" X Width - 8.50" X Depth - 0.80". The Yoga 900 dimensions are Height - 12.76" X Width - 8.86" X Depth - 0.59". Because the Yoga 900 is deeper than the sleeve the laptop will stick out and not fit properly. There are two custom cases for the Yoga 900, you can see them here:

There's a lot I like about this machine, except it has Windows 10. I have my own (licensed) copy of Windows 7 Pro. Since I need a program that actually works, how successfully can I wipe Windows 10 and replace it with 7?

We recommend you contact Microsoft about the compatibility of the Windows 7 Pro version you have and the process required to down grade Windows 10 Home to Windows 7 Pro.

Can you add a 2nd viewing monitor to extend the screen, it notes an HDMI out, is that to connect it? Can touch screen be extended to additional display as well or do you need a special display screen?

Yes, you can use a second external monitor with this system. In order to get touch screen on the external monitor to work, the external screen would have to be a touch screen monitor.

Will this drive a second display well?

This system has a Mini-HDMI-out port. You can use an external monitor with it. Check with the monitor manufacturer for the specific minimum/recommended requirements for the monitor, then compare those requirements with this system's configuration.
