One other major difference is that the plus will scan, copy and fax two sided via the ADF, the 8600 will not. Also, the Plus has gesturing on the screen like a smartphone, 8600 does not.
Definitely go with the 8600plus - it's so amazing! In addition to everything everyone else has said, it's got the legal size scanner - which is awesome. So impressed with this all around!
The 8600 Plus has a larger automatic document feeder (50 pages versus 35 pages), faster print speeds, and a larger display than the standard 8600. All other features are identical.
I just purchased this printer (8600 plus) and the manual (page 19 under "change connection type") says you have to switch between Ethernet and wireless, but not both at the same time due to the requirement for 2 addresses from the router, which cannot be done. I called HP support and they confirmed this. They said you can do USB to your wired PC and wireless at same time.

It's one of my favorite features on this printer. Incoming faxes are converted to a PDF and then emailed to me directly. No more waiting till I get back to the office to pick up a fax which allows much quicker turnaround time for some items.
eFax is a third party service that allows for faxing over the internet instead of a standard phone line. If you want to send a fax you attach it to an email and send it to efax and they fax it out over a standard phone line. The process works in reverse for receiving faxes. eFax receives them for you over a designated fax number and then emails the fax to you.
Yes, see previous answers on this question. Printer has a paper drawer instead of a slot like many HP OfficeJets; but if you load the envelope (front side down) and move the paper guides in, it puts it in the middle of the drawer. Then, use your software to select envelope and it prints just fine. Hope that helps!
I scan both ways. Do not know of any problem, except you might not be able to put small copy through the top tray - such as clippings. Full sheets work fine both ways.
I found it easy. It has a big touch screen display that walks you through most of the steps for the actual printer. I set it up on a wired network not wireless so I can't comment on how easy the wireless configuration is. For Apple Ipad/Iphones that is all you need to do. Next time you try to print it will find the printer. For other PCs you just need to install the client software CD (again not hard.. maybe five minutes) and you are up and running.
