I have 3 rooms, two sets of wired ceiling speakers in each room with in wall volume control knobs in each room. Can I run all three rooms (6 total speakers) off this amp utilizing the volume control independently in each room?

It is possible, but you will need to run it through a device called an impedance matching speaker selector.

Can this be paired with a laptop and act as a speaker?

It has a line in in-put so you can hardwire it to a laptop to it or if you have a Mac you can send the sound wirelessly via AirPlay2
