Would you be able to use an Apple pen with this device? If not what could I use instead?

No. The Lenovo C340-11 Chromebook is not compatible with any active/digital pen.

The Lenovo IdeaPad 320-15ABR has an HDMI-Out port for attaching an external monitor. You can use one external monitor and the laptop screen for two displays. The Lenovo ThinkVision monitor has only one VGA port so you would need a HDMI to VGA adapter to connect this monitor to your IdeaPad 320-15ABR. You could select another monitor with an HDMI connection available as well.
