I'm looking for a laptop for a 5th Grader who submits work via google docs, uses IXL Math platform and conducts Google searches and checks gmail and school email. Will this computer serve those needs?

That will depend on the requirements and compatibility of the software the student will be using. We recommend you check with the software publisher's web sites for their compatibility with Windows 10 S-Mode 64-bit operating system (Windows 10 S-Mode provides added security by only allowing APPs available ( and therefore certified by Microsoft) at the Microsoft Store. If you don't need the added security or you need to install APPs not available at the Microsoft Store, you can switch to standard Windows 10 Home 64-bit Operating System, at no additional cost.) and the minimum/recommended hardware requirements (Is a Graphics card required, the processor speed and the minimum required system RAM and the minimum available hard drive space) to run their program, then compare those requirements to this system's configuration.

I see this laptop has 1 HDMI and USB-C ports. If I added a USB-C to HDMI converter, will this graphics card support dual monitors?

No. There is no video signal through the USB-c port on this model. There is no discrete graphics card within this model. Graphics processing is integrated within the Intel Celeron N4000 processor. It is the Intel UHD Graphics 600 version. You can use a USB universal port replicator to connect dual monitors to this computer.
