Both kids use chromebooks in school as their homework is on google classroom. Would this be appropriate for middle through high school? Can the kids play clash of Clans/mine craft on them? Does it come with virus protection software built in?

Whether they can play specific games on any Chromebook depends if it is available within the Google Play Store. If it is not, they probably will not be able to play the game on a Chromebook. Since there are no programs on a Chromebook, you use the programs (APPs) on the Google Server, the Google Server provides Anti-Virus protection.
