I am looking at running two projectors with this machine, adobe premiere pro 6.0 and Media shout... Would it work well for this?

Check the connectivity requirements for the projectors and compare to the ports available on this system. Also if you are planning on running the two projectors at the same time, check the CPU and RAM requirements and compare that to the configuration of this system.
