There is not an extended battery, but the HERO7 Black and the HERO8 Black both feature replaceable batteries, so it's easy to swap them out to get more power. Both cameras can also be used with external power for longer shoots too.

Is the the GoPro Hero 7 Black sound quality good for cycling? I'm planning to have it strapped to my chest and have the ability to cleanly record the sounds of the city.

The audio settings for the HERO7 Black offer a couple of great options for cyclists. One that would be really helpful is the Wind setting that leverages the three mics on the GoPro to give you the cleanest audio in windy situations. Also, the HERO7 Black has some Protune audio settings so you can capture RAW audio so you can tune in the audio levels you want while editing.

I play soccer goalie position to be exact, is this a good option to record my game and make a good quality highlight video?

It can definitely help you get some great shots. In addition to wearing it (for example on a chest mount), the GoPro is small enough that you can mount it in the goal or on a back post to capture the action from the side or behind.

Is this screen protector waterproof?

The protectors themselves are fine to use in water. They adhere to the glass on the GoPro similarly to screen protectors you might use on a smartphone screen. The adhesion should hold on underwater unless it's used somewhere with a strong current, etc. that could peel the protectors off. Note though that the protectors do not add any waterproofing advantage to the GoPro itself.
