Sorry, the HERO7 Black does not have an option to pair bluetooth mics directly to the camera.

Can you watch on the camera what it is recording?

Yes, the HERO7 Black has a rear screen that allows you to see what you're recording while you're recording content, and you can also play back anything you've already recorded and see it on the screen.

Will it show your mph on screen?

It won't show in real-time on the screen, but you can use the GoPro Quik app to display gauges like speed on your videos when you edit the videos.

Do any of the GoPro's offer sound?

Not sure if you're asking about recording sound or being able to hear sound on playback, but the newest GoPro cameras, including the HERO7 Black, do both. There are internal mics on the cameras that capture the sound, and you also have the option to connect an external mic using our Mic Adapter. For playback, the HERO7 cameras all have internal speakers that will allow you to hear the recorded audio when you play the video back on the GoPro.

Is the camera able to take video at night or in dark settings?

There are some settings with the HERO7 Black that can help improve low light performance. One good option is to use the Protune to bump up the gain/ISO settings if you know you're going to be shooting in low light.

GoPro does not make a camo case for the HERO7 Black.

How long will the GoPro record for, and when it reaches that limit will it stop or start recording over previous events?

With the HERO7 White, when the SD card is full, the camera will stop recording. If you are interested in a GoPro that allows you to record continuously with new content overlaying older content, you'll want to find a GoPro that has a feature called Looping. For example, the HERO7 Black has a Looping option.
