can i watch what the hero8 is recording, on my iphone in real time?

You can see the shot before you start recording, but once the recording starts, it will not display a live feed to your phone. You would be able to view clips after they are recorded though.

It can, but you would need to attach it to the GoPro Media Mod first. The Media Mod has an HDMI port that you can use to connect the camera to a display.

Does the go pro 10, sku 6492217, shoot 360 degrees?

The HERO models, including the HERO10 Black, do not shoot 360-degree shots. The GoPro MAX camera does shoot in 360 through.
