Will a Sonos One SL pair/connect to an EPSON Projector w/ model no. V11HA87020

It won't. One SL is designed to be a standalone music speaker. If your projector has HDMI ARC or eARC we would recommend using one of our soundbars. Alternatively you can use a receiver, and us Sonos Port to listen to you music via that receiver.

I have the ARC hooked up to Wi-Fi and it seems to recognize the Sub but not sure any sound is coming out of the Sub. I do not have the ability to hook up the Sub to Wi-Fi, will it work without being hooked up to Wi-Fi? Thank you!

The Sub must be connected to the Arc via a network connection. This would either have to be wifi, or with an ethernet cable. Please reach out to us if you need help with this at support.sonos.com

This is completely up to you. Our recommendation is the One SL as it's in expensive and easy to place on an end table next to your loved one with hearing complications.

What are all the turntables that work with these speakers? Is it only the Victrola Stream Onyx and Carbon?

Victrola Stream products are the only products that wirelessly connect to Sonos speakers. However, any turntable can work with our products when plugged into the back of Sonos Amp, or Port. Note with Port, you may need a phono preamp.
